Veggies on a Stick

She can grill it, eat it, & get that veggie fix
But I bet you $50 that she can't do this...

Were you singing along to that slightly altered elementary school rhyme?  I sure hope so!  That's the kind of joy that veggies on a stick bring in the food world.  The colors can brighten up any mood and/or food dish!  

And what's even better than that? They are super easy!  For these, we cut up zucchini, squash, and 3 different colored bell peppers.  Can't forget the baby tomatoes either- those are my favorite!

I have to credit Matt for the seasonings- he drizzled olive oil over the skewers and sprinkled them with garlic herb seasoning and creole seasoning.  You can choose whichever seasoning you like or keep them plain.  They don't take too long on the grill either, but if you are grilling any meat I would recommend putting the veggies on first.  They do take longer than the meat.  We kept them on about 20 minutes and the veggies were soft (my ideal).

Nutty Bites: Hummus

Hummus makes the perfect dip!
If I were Webster, I would have created the word hummus to mean: the one who hums.  But, since I am not Webster, I will refrain.  Instead, I will jump on the hummus bandwagon and eat it.  Have you tried it yet?

Hummus, in my humbly option (see what I did there?), can either be extremely tasty or blah!  The secret is in the flavor or brand.  I have not made my own yet so I am a brand snob.  However, there are plenty of great recipes out there.  The brands & flavors that are my favorite are Pita Pal Original & Hope Hummus Spicy Avocado (pictured above). Yum!
 
It is also nutritious.  Garbanzo beans are a great source of fiber and folic acid.  Beans, in general, can help lower cholesterol too.  I have nothing bad to say about the other typical ingredients either, which include olive oil, garlic, lemon juice, and tahini.  Tahini is sesame seed butter and adds some protein, fiber, calcium, and monounsaturated fat.
 
What I love about hummus is that it is so versatile.  If you are new to hummus, use it as a dip for your veggies, toasted pita, or pretzels.  Or even try it as a condiment on your sandwich, burger, or wrap.  A friend of mine even mixes it with salsa to create a spicier dip.  WebMD mentioned blending hummus with broth, water, or wine until you get your desired drizzling consistency for dressing on cold pasta salads.  Lots of options!

Some Like It Smooth!

Have you jumped on the smoothie train yet?  If not, hop on.  It's about time.  Choo choo!

Why are smoothies so great?  Well, for those of you who have a hard time getting fruits and vegetables into your body on a daily basis, it is a super fast and easy way!  And did I mention tasty?  Oh so tasty!
Ready to mix!!

One of my favorite smoothie recipes happens to have plenty of green good stuff in it that even Popeye would approve.  All you need is a blender, 1 cup green tea or coconut water, 2 c spinach leaves, 1 c of frozen strawberries or other favorite fruit, 1 tsp agave to sweeten, 1 TB coconut oil, & 1 TB chia seeds.  Mix it up and enjoy!  I like my smoothies super cold so if I use fruit that is not frozen I definitely put ice in mine.

For a grab and go smoothie I can get at the grocery store, I like the brand Naked.  Be sure to stick with the serving size though, as the calories are 270 in one bottle (2 servings).  No big deal.. just account for them!  

Keep in mind that when a smoothie has the green good stuff in it, the smoothie WILL be green. Don't let this freak you out.  Give it a try and I promise you will like the stuff just as much as your body does.
